Nigella uses a cut of lamb little used in the UK that are quite common in the states. Lamb ribs are known as Denver ribs in the States, as Denver is the biggest producer of lamb out there. With her lamb ribs and cumin seeds, Nigella uses a seed after her own name. Nigella seeds are often used in curries and even included in the crusts of breads.
